Easy to make Green Pesto

I always try my best for my children to eat a health meal. Veggies or salad have to be part of the dish. 

I also try to be creative with my dish, so this time I blended fresh basil with fresh spinach and tossed it with the spaghetti pasta.

While the spaghetti was cooking I roasted some fresh Cherry Tomatoes in the oven, to then use them to garnish my pasta dish. It was yummy and delicious!

Green Pesto

  • 1 cup spinach
  • 2 cups basil
  • 2 garlic cloves, peeled
  • 1/2 cup olive oil
  • 1/4 tsp salt
  • 1/8 tsp fresh ground pepper
  • 1/2 squeezed fresh lemon
  • Step 1 Add all the ingredients in a food processor and blend on medium high speed a few times.
  • Step 2 Pour pesto over spaghetti pasta and toss it a few times until all the spaghetti is coated. Serve it nice and warm and garnish the plate with roasted tomatoes.
