Tender Pork in Foil

We all enjoy summer… It’s an amazing idea, after work, getting together and being with friends at a local cafe or pub. But this doesn’t actually happen when you are a parent of little ones. After work we think about, picking them up from summer camp, spelling Bees, showers and dinner! But all is good, because we too can enjoy, while dinner is preparing on its own.
I would suggest, buy some veggie from the local market, a few bacon stripes and stick it all into the meat. Season it up with some fresh herbs, wrap it in a foil and stick it in the oven.
The pork meat that I use for this recipe is cut from the upper portion of the shoulder. It’s an ideal candidate for slow-cooking. It will be cooking in the oven for 1h30m. So there is a lot of time to relax and enjoy.

Without making a big deal out of it, you just made a delicious tender succulent meal. Serve it with a fresh tomato and cucumber salad and roasted potatoes. Enjoy!!

Ingredients
  • Pork meat
  • 2 carrot, chopped
  • 1 sweet bell pepper, chopped
  • 1 corn Kernels off the cob
  • 1 yellow onioin, chopped
  • 6 bacon stripes
  • 2 garlic cloves, thinly diced
  • 1 bay leaf
  • 2 fresh parsley, chopped
  • 3 tbsp olive oil
  • 1tbsp squeezed fresh lemon juice
  • 1/2 cup dry white wine
  • salt and pepper, to taste
Directions
  • Step 1 Preheat the oven to 325F.
  • Step 2 Insert the veggies into the meat as well for the bacon stripes.
  • Step 3 Add the garlic and the herbs, drizzle the olive oil and squeeze the lemon. Season with salt and pepper, to taste.
  • Step 4 Wrap a string around the meat so that it all stays together.
  • Step 5 Prepare the foil onto an ovenproof baking dish. Transfer the meat into the foil and pour in the wine.
  • Step 6 Close it and let it roast for 1h 30minutes.
  • Step 7 Remove from oven and serve as is!
